Eggs Up

My kids crack me up - the day after I post about my amazing egg waffles Tink asked for plain ol' eggs this morning...  My Mom gets eggs from a co-worker that raises hens.  He takes great care of his birds and they produce amazing eggs.  I wanted to show the difference between your conventional supermarket egg and a home-grown egg.


Now, look at the yolk difference.  Clearly the homegrown egg (on the left) is much darker than the supermarket egg on the right.  Not only is the yolk darker, but the white is  much more clear.  Ok, you're probably thinking.. I don't really care what it looks like.  This is where it gets interesting... Not only does it look better, it tastes better too!  AND - Here's the kicker!!!  It's much more nutritious!  Here are some interesting stats:


Just look at the difference!  Yes, they can be more expensive, but they provide so much more nutrition than your every day supermarket egg.  Also knowing they come from a chicken that is being taken care of is a huge bonus for me.  

I decided to make the kids' eggs a little more "fun" this morning and used cookie cutters once their eggs were done.  Tink thought it was amazing and asked for another egg... Bean was unsure about eating his snowman.  It took some coaxing, but he finally did it and he really enjoyed it too!

Congestion Miracle

The title might sound a bit extreme, but when you have sick little children and something works... I'd say that's quite the miracle!  Poor Bean was quite sick over the last few weeks.  He had a horrible cough and a lot, I mean a LOT of congestion.  We were waking up 10+ times a night with him just trying to settle his cough down and get rid of the congestion.  I tried everything from steam showers, humidifier, the dreaded nosefridia, homeopathy, and essential oils.  Nothing was giving him the relief he needed.

I am a huge advocate of essential oils.  I am even a distributor of a very well known brand.  I tried multiple different oils with very minimal results.  I heard about Breathe by doTERRA and wanted to try it.  My sister is a doTERRA distributor so I was able to get one quickly.  I put a drop of the Breathe on my hand as well as a dab of coconut oil and rubbed Bean all over his chest and back.  This was the start of something I am so excited about.  Bean coughed twice that night... TWICE!  We just went from 10+ times to 2!  I thought to myself... well, maybe he's just getting better... I am going to try putting him to bed without Breathe on him.

B-A-D idea!!!!  He woke up 3 times before 10pm, and I immediately put Breathe and coconut oil back on his chest.  He slept soundly for hours before waking up coughing.  I am a huge believer!  I also have been diffusing Breathe at night next to our bed (Bean sleeps smack in the middle of us) and it's amazing how much our sinuses open up instantly!  If you're questioning the jump into essential oils, I urge you to just try one or two, you won't be disappointed!

Banana Egg Waffles

I admit... we eat eggs almost every single morning.  Options are so limited when trying to feed children a healthy, protein packed, non-sugary breakfast.  Bean and Tink started getting really sick of eating plain eggs in the mornings.  It actually got to the point that Tink started to gag when she would take bites.  Huge mom guilt!  I tried thinking of a way to hide the eggs into something they enjoyed, and this is exactly what I came up with... and it's a HUGE success!!



Ingredients:
(makes 2 waffles or 4 small pancakes)
  • 3 eggs
  • 1 banana
  • 3 TBS coconut flour
  • 1/2 TBS cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • coconut oil (to spray)
Mix all ingredients (not coconut oil) together in a blender... VERY IMPORTANT: Spray waffle iron with coconut oil spray before every new waffle!!!!  Pour onto a hot waffle iron and let it cook (time is depending on the waffle iron, mine takes 2 minutes).  Carefully lift both sides of the waffle onto a plate.  This last part is a bit difficult, but with some practice you can have perfectly beautiful waffles.  I admit, a few of the waffles I've made turn into crumbles taking them off of the iron.  

Tink and Bean eat them up!  Never a complaint, and we don't even use a syrup or a topping.  I hope you enjoy!  What is one of your favorite ways to hide healthy food into a dish?
