Banana Egg Waffles

I admit... we eat eggs almost every single morning.  Options are so limited when trying to feed children a healthy, protein packed, non-sugary breakfast.  Bean and Tink started getting really sick of eating plain eggs in the mornings.  It actually got to the point that Tink started to gag when she would take bites.  Huge mom guilt!  I tried thinking of a way to hide the eggs into something they enjoyed, and this is exactly what I came up with... and it's a HUGE success!!



Ingredients:
(makes 2 waffles or 4 small pancakes)
  • 3 eggs
  • 1 banana
  • 3 TBS coconut flour
  • 1/2 TBS cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • coconut oil (to spray)
Mix all ingredients (not coconut oil) together in a blender... VERY IMPORTANT: Spray waffle iron with coconut oil spray before every new waffle!!!!  Pour onto a hot waffle iron and let it cook (time is depending on the waffle iron, mine takes 2 minutes).  Carefully lift both sides of the waffle onto a plate.  This last part is a bit difficult, but with some practice you can have perfectly beautiful waffles.  I admit, a few of the waffles I've made turn into crumbles taking them off of the iron.  

Tink and Bean eat them up!  Never a complaint, and we don't even use a syrup or a topping.  I hope you enjoy!  What is one of your favorite ways to hide healthy food into a dish?

  1. I love hiding zucchini in spaghetti, I shred it with a cheese grater and they never know it's there.
